Wendy Foncette and Chef Selwyn Wickham, walk you through the simple stages of making a Trini Christmas staple…Fruit Cake…It’s mixed in under ten minutes, and into the oven for between 70-90 minutes [depending on the size of the cake] and youre done….
Trini Black Cake
8 oz margarine
8 oz brown sugar
9 oz flour
2 oz ground almonds
2 lbs ground mixed fruits… currents.. raisins.. mixed peel… sweetened sorrel pulp ….stewed pineapple. cherries ..
2 cups rum
1 cup cherry brandy
1/2 tsp each of cinnamon .. nutmeg… ground ginger
pinch of mace
1/2 Tbsp baking powder
Browning as desired
Have margarine at room temperature. place in mixing bowl with flour sugar ground almonds eggs and slices. ablens well.
Add fruit mixture and baking powder then mix in the baking powder. Mix well then poured batter into greased and lines cake tins
Bake in a 300 F oven for approximately one to one and a half hours or until skewer comes out clean when places in the middle
Soak with additional liqueur immediately after removing from the oven if desired.
